Egg Salad

I really enjoy easy and healthy.  By the time I fix the foods for the three monkeys...I just want to eat quickly...so the faster and healthier the better. Since Easter just happened, we have an insane amount of hard boiled eggs in the house, all brightly colored.  And while I love a good hard boiled egg, I needed to make something to help get rid of more than one at a time.  I eat it on top of spinach and arugula, topped with some tomatoes.  Would also be good on wheat toast or on boats of romaine.  My mom ate it inside a slice of turkey today. I made a big batch so that I have plenty for the week:) Egg Salad: 6 hard boiled eggs, sliced or chopped 2 avocado, sliced into chunks 2 Tablespoons of soy yogurt (or regular, but plain flavor) 2 tablespoons of apple cider vinegar or juice from 1/4 of a lemon 1 tbsp. onion 1 Tbsp. dijon mustard (optional) 1 Tablespoon of banana peppers (optional) 1 tsp. relish Salt Pepper Mix it all together.  If...

My grandmother was KNOWN for her salsa. My mom and I spent lots of afternoons trying to figure out the secret to her recipe. My mom finally duplicated it...I have not been able to and since this isn’t my mom’s blog, i don’t think i can divulge the secret. I like to make recipes with fresh ingredients that don’t take a lot of time and that are healthy. I try to make things from scratch when I can - especially fresh easy recipes. However, when it comes to salsa there are so many brands and they all do the job for my late night cravings of tortilla chips and the tomatoey goodness. However, a lot of brands can be full of sugar, preservatives, and other ingredients that are just not needed. This recipe takes less than 15 minutes to put together and is always a crowd pleaser. Clean Eating Recipes..and my basics

A few days ago I summoned my Facebook friends to send me new recipes that they enjoyed making that were considered clean eating.  Then, one of those friends asked if I could compile some of the recipes into one post.  Most of the recipes I post are clean eating, at least in my eyes or as close as I can get them, but I wanted new recipes to add to my weekly rotations. I think clean eating can mean many different things depending on the person, and how far along they are in their progress with a healthy eating lifestyle.  "Clean eating" is defined as eating foods as close to the whole natural state as possible and with little to no preservatives.  The word "healthy" can mean many things depending on your point in the healthy lifestyle process and circumstances surrounding you.  Healthy can be synonymous with: low calorie, low-salt, vegetarian, low-fat, less processed, and so on, and so on.  So for confusions sake, I try to refrain from the word "healthy". ...

Butternut squash, Quinoa and Asparagus

A butternut squash is always so tasty and makes such a large amount that I wanted to make a dish that would be easy to prepare ahead of time, cook up in the evening in one pot, and also used the majority of the squash. Another plus: it's also made from whole foods and is easy to bring together at the end of the day, which is what I always need. I'm not sure why, because dinner is at the same time every night, but yet dinner sneaks up stealthily to a mom of hungry children. This makes a lot, so I hope you like leftovers:) Oh, and you'll need a large skillet with a lid.  *You could chop the squash and asparagus in the morning and just put in the fridge in a air tight container till ready to cook.  *I omitted the nuts for some of the kids. You can stir them in, but I just chopped some for the week and will sprinkle them  to the top of each serving. *Did I mention there will be leftovers? So I didn't put the full amount of spinach in.
