Apple Crisp

My kids and I went apple picking with some friends and came home with soo many apples. I don't even know all the kinds because the kids were lke squirrels hopping from one row of apple trees to the next. My kids eat apples at an alarming rate so they each brought home a full 2 pound bag. I wanted to make something that the kids would enjoy and settled on this. I added protein powder to it, because, I figured if my kids are gonna eat baked goods, it might as well have an extra boost to it. When you see that you have to peel, core and chop the apples, don't be scared. Take your potato peeler and get rid of the peel. Cut around the core, and then chop the flesh. I only covered this with half walnuts because SOMEBODY doesn’t enjoy the texture. Super easy - no apple corer needed. This recipe has the fiber, the protein, and the carbs! Enjoy! Cinnamon, Pumpkin, Apple Rolls

These were such a crowd pleaser with my family.  They are definitely best warmed up. If you need extra icing the recipe is below or buy an extra can of vanilla icing. These are a little fancier than your normal cinnamon rolls but less work than bougie cinnamon rolls. Just like me they are somewhere inbetween simple and bougie. Two of my kids were not a fan of the “soft apples” so you could just omit them and the milk then as well.  Ingredients: 1 stick of butter 1/4 cup brown sugar 2 large apples, peeled, cored, chopped into bite size 1/2 cup pumpkin puree 3 eggs 1/4 cup milk 2 Tbsp. honey 1 tsp vanilla 2 tubes of 8 count cinnamon rolls with icing ***optional - 1 can of vanilla icing   Recipe: Set oven to 350 Melt 1 stick of butter and brown sugar on medium heat until it bubbles. Stir in apple bits. Let cook until the apples are tender. While apples are cooking, in a separate bowl mix/beat the pumpkin, 3 eggs, milk, honey, and vanilla until well mixed. Take cinnamon rolls...

Quiche

I am not a big savory person in the morning, but I am coming around to it.  Since being in the whole "I guess I'll eat healthy today" mindset, I've needed to branch out and eat something else besides my favorite cereals :((( This recipe is adapted from a few different recipes. I made this quiche for a friend.  They seemed to enjoy it, and I've made it a few times before.  It packs in the flavor and the protein and makes dinner or breakfast super easy! Plus, it has goetta! When I make it for us, I usually omit the crust and just spray the pan really well.  Or there are plenty of healthier options for crusts now.  I found a gluten free, sugar free, soy free, egg free crust the other day...I didn't buy it, but it was an option:) So, make your own, buy the refrigerated ones in a box that you roll out, or buy the ones already in the pan, or just omit it.  Any way you buy it, make sure it is NOT baked yet.
