Pulled Beef

Whether you want to make this in your crockpot or in your instapot - it’s another easy crowd pleaser! Serve over rice and your favorite toppings for bowls or make for tacos!  Ingredients 2-3lb chuck roast, cut into large chunks 1/2 cup beef broth 5 garlic cloves, peeled 2Tbsp apple cider vinegar 2Tbsp lime juice  1 tablespoon dried oregano  2 tsp cumin 2 tsp salt 1 tsp black pepper 1/2 tsp ground cloves 2 whole bay leaves Serve with Rice, chopped tomatoes & onions, spinach, avocado, shredded cheese, and whatever sauce if you think you need it.  Recipe: Place roast chunks into crockpot or instapot. If using an instapot, place a bit of oil on the bottom first. Sprinkle with salt and pepper.  Place all over ingredients in a blender EXCEPT the bay leaves. Blend till combined.   Pour over the beef chunks. Add the bay leaves If crockpot: 4-6 hours on high or 8-10 on low. Lentil Tacos

So - every now and then I find a picture of something on social media and forget where I found it. But I try to recreate it. I believe this recipe was inspired by a picture from Instagram on Meal Mentor. Their food always looks amazing - and their pictures too. So, tonight we have lentil tacos. Anytime there is something to be boiled I use a broth. Hands down instead of water because it gives better flavor. However, obviously you could use just water. But IMO broth is better. Also - I enjoy making dinner in multiple steps I can do throughout the day.  This way I can do a little, and play a little, do a little, play a little. In this case I made the lentils ahead of assembly.  And added seasonings in a crockpot instead of a stove.  Either way will be fine and tasty. Fish Tacos

  I loved making these...I mean really, who doesn't love making any kind of tacos?!?! Actually, I love tacos, but always feel like there is so much chopping. This recipe didn't feel that way. They were easy for me to prepare with kiddos because you can make a little bit and then go play...make a little bit...go play. And it all goes in to the fridge too! Except till the very end when you cook the fish which didn't take long at all. This recipe was a combination of kids helping in the kitchen, and a few recipes. My husband had his birthday and wanted something a little different than our normal "chicken" dinners, so fish and shrimp it was! I made these with a Slaw and a Lime Creme sauce. I also served my guacamole for dipping the tacos in to. These were very filling and super easy. It seems like a lot of steps and ingredients, but it really wasn't.
