Street Corn Nachos

These are not your average nachos. I love trying new dishes and wanted something easy that transferred well to a crowd. It stayed fairly well hot and still tasted great even after it cooled down. Chopping was also a minimum. Add more mayo if you want the spread to go further. You of course add or subtract whatever! Don't forget the forks so you can grab the bits that fall between the cracks.

Ingredients

  • 1 bag of tortilla chips (I used white corn chips)
  • 2 & 1/2 cups of shredded Monterrey Jack cheese
  • saute oil
  • 1 large bag of frozen corn (about 3 cups) or 3 fresh ears of corn cut off the cob.  
  • salt
  • pepper
  • 2 garlic cloves minced
  • paprika
  • 1 jalapeno, diced with seeds removed (or 1 tsp from a jar of diced jalapeƱo)
  • 3 or 4 limes
  • 1/3 cup sour cream
  • 1/4 cup. mayonnaise
  • crumbled Cotija Cheese (mine came in a 2 cup bag)
  • 2 tbsp. chopped fresh cilantro

Recipe:

  1. Preheat oven to 375 degrees. In a large skillet heat saute oil over high heat.
  2. Add corn to the skillet and stir. Season with salt, garlic, & pepper. Saute for 2 minutes stirring and tossing frequently. Transfer to a large bowl.
  3. Add jalepeno, paprika to liking, and 2 tsp of fresh squeezed lime juice (1 maybe 2 limes). Stir to combine.
  4. Layer a large baking sheet with foil. Then lay the torilla chips on the baking sheet. Sprinkle the 2&1/2 cups of Monterrey Jack cheese on the tortillas. Bake in the oven for 5 minutes until cheese is melty.
  5. While cheese is melting, in a small bowl stir the sour cream, mayo, 1 tsp of lime juice, and a bit of salt. Stir to combine.
  6. When the chips are finished being melty, top them with the mayo mixture, then corn mixture, then the Cotija cheese (not all of it, just what you think is needed), then last sprinkle on the cilantro.
  7. If you are headed somewhere, cover with foil.
  8. Serve with some chopped lime wedges.

***I definitely added a few extra drops of lime juice after everything was combined and ready. 

***I definitely put more mayo and sour cream than listed above, but I didn't want to type 1/2 cup for sour cream because that sounds ridiculous.

    P.S. 1/2 cup of sour cream is NEVER ridiculous.
