Chicken Quessadilla



 

I love it when recipes take me less than an hour from start, combining or chopping, to finish - my plate. This recipe was a crowd pleaser AND it was easy cleanup AND tasty. In this recipe I made the chicken the night before in a crockpot, so that is how I am writing the recipe. You could always bake the chicken ahead and shred ahead or pan fry and make right before you combine everything. I just wanted to make things easy for me - hence the crockpot.

Ingredients:

For the Chicken

  • 4 chicken breasts
  • 1 cup broth
  • 1 cup water
  • 1 tbsp. oil
  • salt & pepper
  • sprinkles of spices like cumin, garlic, onion, paprika

 For the Quesadilla

  • 4 cups chicken breasts (you might have a little extra leftover)
  • 2 tbsp. olive oil
  • 2 tbsp. lime juice 
  • 2 tsp. chili powder
  • 2 tsp cumin 
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 of a red bell pepper, diced
  • 1/2 of a yellow onion, diced
  • 4 cups Mexican cheese blend 
  • 1 cup shredded mozarella
  • 10-12 large (10inch) tortillas
  • 4 tbsp. melted butter

Optional Toppings:

  • salsa
  • pico
  • guac
  • avocado
  • lime wedges
  • cilantro

Recipe:

  1. Cook the chicken in a crockpot with the water, broth, and spices on high for 4 hours. Shred chicken with a fork. Set aside to cool (I make this the night before).
  2. When ready to bake, set oven to 400. Ready a large sheet pan with foil. 
  3. In a bowl combine the chicken, oil, lime juice, spices, bell pepper, and onion. Stir till combined.
  4. Layer the tortillas onto the sheet pan so they overlap & connect so they create a crust. The tortillas so lay over the edge of the sheet pan.
  5. Layer on half of the cheeses on top of the tortillas.
  6. Then layer on the chicken and spread evenly.
  7. Layer the rest of the cheese on top.
  8. Lay two more tortillas on top or however many you need to cover the top. Fold over the tortillas that were hanging over the edge so they meet the top layer of the tortillas.
  9. Spread the melted butter on top of the tortillas. You might have to convince the tortillas to lay down. 
  10. Take a sheet of foil and loosely lay it on top of the tortillas. Then place another sheet pan on top to keep everything down.
  11. Bake for 25 minutes. Take off the pan and top foil and bake another 5 minutes.
  12. Take out of the oven and let rest for 3 minutes. Then flip onto a cutting board. I used a pizza cutter to slice into sections.
  13. Enjoy with your toppings!
