Goolash

https://drive.google.com/uc?export=view&id=1vJOZAJZ8msodJ2uYN7wjsD7HF-UkoNDh I love any meal that is ONE pot and everyone loves to eat. While this is not vegetarian, I have made with veggie crumbles and it was very tasty too. 

RECIPE:

  • 1.5 lbs of ground beef (or 1.5 bags of meatless crumbles)
  • Saute oil
  • 3 garlic cloves, minced
  • 1 white onion, chopped
  • 3-4 large carrots, peeled & sliced
  • ***Optional*** 1/2 container of crimini mushrooms, diced
  • 1 (10.5oz) can of diced tomatoes in chilies 
  • 1 container of cherry tomatoes, sliced in crosections ( to save time you could add two cans of diced tomatoes instead of chopping fresh tomatoes)
  • 30 oz. Of tomato sauce
  • 3 cups of beef or vegetable broth (or water)
  • 2Tbsp. Worcestershire sauce
  • 1 packet of dry Italian dressing mix
  • 16oz. Macaroni pasta (I used Banza chickpea pasta noodles)
  • ***Optional Toopings***Cheddar cheese, chopped parsley, chopped, basil, oyster crackers, sour cream


  1. Turn instapot to saute mode. Add a bit of cooking oil to pot. Place ground beef In and sauté till no longer pink, mixing and stirring periodically.
  2. At about 3 minutes in of sautéing beef, add in the carrots, onions, and mushrooms (mushrooms are optional). Stir and sauté about 5 more minutes. 
  3. Then add in the garlic and sauté only for about one minute. 
  4. Add the rest of the ingredients besides the pasta. Give a good stir. Then add the pasta. 
  5. Close lid on instapot. Cancel sauté mode and set on High pressure cook for 4 minutes - instapot will take about 15 minutes to come to pressure. 
  6. Once it is finished cooking for 4 minutes, instant release the pressure from the pressure valve. If you are not ready to serve you could let it natural release until you are ready to serve. 
  7. Once float valve has dropped, open lid and  serve immediately. Top with parsley, basil, cheddar cheese, oyster crackers, you name it! Enjoy!

I used my Instapot but you can easily use the stovetop. Just sauté ingredients in a cooking oil, in a large pot on the stove. Add all the ingredients in and stir. Bring to a boil. Reduce heat to medium low and simmer about 10 minutes. Then serve immediately!
