Greek Hummus Pita Pizza
This took some prep work, but I enjoy reciepes I can come back to and don't take a long time to assemble. Lots of pans going at the same time get me all hot and bothered because I get interrupted a bagillion times and then loose my place and then inevitably I miss an ingredient or a crucial step.
I also enjoy fresh food and in the summer I enjoy anything not super hot. Turning on the oven does not appeal to me. I made the hummus in the morning and then made the tzatziki sauce in the afternoon. Then after I got the kids plates assembled I could make mine more easily.
The kids liked the items deconstructed, because who under the age of 10 likes all their food to touch...no one liked the olives and two liked the sauce...they all ate the pita and hummus...and some ate the tomatoes and spinach.
Be warned - this makes a lot of hummus and tzatziki sauce...which is fine because we eat all the hummus, but had to share with some the sauce.
Recipe:
Hummus:
- 2 cans of chickpeas, drained, but reserve the juice
- 1/4 cup olive oil
- 1/2 cup of Tahini with some of it's oil
- 3 cloves of garlic, peeled
- salt, pepper, and cumin to taste.
- lemon juice from 1 &1/2 lemons
Put all ingredients in a food processor. Add the reserved chickpea juice slowly to give you a good smooth texture. Too much will give you watery hummus. Process on high. Place in a sealed container and keep refrigerated until ready to use.
Tzatziki Sauce:
- 1 (32oz) container of plain yogurt - soy organic or regular
- 1/2 an English cucumber, shredded
- Zest from 1 lemon
- Juice from 1 lemon
- 1 garlic clove, minced
- Salt
- Pepper
Combine all ingredients and stir together. Refrigerate till ready to use.
For Pizza:
- Sliced cherry tomatoes
- Spinach
- Olives - halved
- Take pita pocket.
- Add layer of hummus
- Add layer of spinach, tomatoes, olives
- Sprinkle tzatziki sauce on top
- Add a bit of salt
