Mint Chocolate Truffle Cake

When you are good at making certain foods you can get comfy in just making those delectable items. But this season I wanted to come up with something that was easy...semi-homemade...and didn’t need a ton of ingredients. Soooooo...


Ta-da!

Now, this is a small, one serving Cake. I was making items for a bake sale and wanted to fancy up an easy chocolate cake recipe and this is what happened. My grandmother handed down a bundt pan that holds six mini bundts (which is NOT fun to grease and flour btw). So, I also made 4 smaller loaf pans which were cute but I didn’t get a picture of them. 

I’m going to say that here is a recipe with a BOX cake...SHOCKER! A box of chocolate cake mix at your nearest grocer. I actually made one batch with a box mix (because I wanted fancy with less cleanup) and one with a scratch mix (because I had extra time) and they both tasted awesome. If you choose the scratch just google basic chocolate cake recipe and I’m sure it’ll be greeeeeat. So, you decide;) some of my secrets to baking come from my mom, my grandmother, and various things I’ve leisurely read of cake recipes. 

Recipe:

  • 1 box of chocolate cake mix
  • Follow directions on the back of the box EXCEPT use HOT water and two extra egg yokes. 
  • So you’ll need oil and water and eggs most likely depending on your box mix. 
  • 1/2 of a bag of mint truffle Hersey Kisses
  • 1 row of mint Oreos chopped into small bits 
  • 1 can of chocolate fudge icing (you might need more depending on how many items you are making)

  1. Heat oven per box instructions. 
  2. Grease and flour whatever pans you’ve decided to use ( 4 small loaf pans, 1 large bundt pan, 1 - 13x9 pan, 2 - 9x5 loaf pans, 2 - 9 inch rounds, cupcakes) 
  3. Make cake mix per box recipe plus the use of HOT water and extra eggs. 
  4. On high speed, add the mint Hersey kisses. It’ll break them up and still leave big chunks. 
  5. Bake for as long as recommended on the back of the cake mix box. It’s just important that you cook it all the way. Insert a toothpick into the middle of the cake and test if it is done. If it comes out gooey, it needs to bake longer. If it comes out crumbly or clean it is probably fine. 
  6. Remove from the oven and let it cool for a few minutes in the pan on a wire rack. Then transfer out of the pans and let it cool completely. 
  7. When the Cake is cooled, microwave the can of icing for about 30 seconds or until it is semi pourable, but not completely liquid. Pour generously over top of each cake but it doesn’t have to completely cover the sides. 
  8. Add the Oreo crumbs to the top of the cake.
